Minus the Beetroot (as the kids never liked them and it is an acquired taste even for adults!), the combination of carrots, oranges and sesame seeds was gorgeous! I took a close up shot on my phone but it was not captured and I did not realized this until we finished the entire platter of the salad.
To quote Jamie...
“If you’re looking for a salad you can make all the time, this is the one. It’s great with everything from leftover beef or slow-cooked lamb, to oily fish or crumbly cheeses, such as feta. ”

Attempt #68: Frozen yoghurt layer cake
"There’s nothing artificial in this cake - just any seasonal fruits and yogurt!"
Now that caught my attention!
The result:
I did a slight creative twist, using caramel chocolate as the first layer instead of fruits and yogurt blend.

Jamie's rendition:
Ingredients
- 250 g strawberries
- 16 tablespoons natural yoghurt
- 250 g bananas
- 250 g raspberries
- 250 g blackberries
- seasonal berries
Method
- Line a loaf tin with clingfilm.
- In a blender or food processor, blitz the strawberries with 4 tablespoons of yoghurt. Pour the fruit mixture into the tin and place in the freezer for at least 15 minutes.
- Meanwhile, rinse out the blender or food processor, and blitz the bananas with another 4 tablespoons of yoghurt. Add this layer to the tin and return it to the freezer.
- Repeat with the other 2 types of fruit and remaining yoghurt.
- The cake is ready as soon as the top layer is hard, but you can keep it in the freezer as long as you like. Slice the cake while still frozen and serve with berries.

Attempt #67: Prawn & courgette spaghetti
Courgettes or zucchini or if you are like me, I substitute them with local cucumbers if I can't find zucchinis available from the grocer. And I attempted this recipe as my mom who is visiting have never thought that one could fry zucchini and it will taste nice.
The Result:
I replaced chillies with tomatoes as I had to make this dish kids-friendly. And I added some chicken slices. Make sure that you brown the zucchini as they will taste so much nicer!
Jamie's version:

Attempt #66: St Clement’s shortbread
Now, this is my very first attempt in making a JO pastry recipe. And I must say that like all his other recipes.....they are pretty easy to make and yummy to eat. Most of all, my kids love them!!
The Result:
The Result:
The zest of the lemon and orange makes this shortbread so much more divine and less of those mass produced shortbread.
Jamie's version....."Oh I do need to get those nice plates and tea cups! "

Attempt #65: Chicken Club Sandwich with a Twist!
Now, why do I call this as Chicken Club Sandwich with a twist?
Well, it calls for an interesting salad dressing base consisting of pear, cucumber, tarragon (herbs), english mustard, yogurt and apple cider vinegar.
The result:
Super healthy, light sandwiches with a Mediterranean twist.
And oh, this goes into the picnic basket along with the Guacamole that I made in Attempt #64.
Spicing the wrapped sandwiches up with some Aussie flags in conjunction with our Straya Day picnic!

Attempt #64: Classic Guacamole
Picnic food, BBQ food or even drinks night....Guacamole is a sure winner! Well, for me at least. Coupled that with corn chips, it satisfies my weakness for chips in a healthier way instead of Pringles! :)
Guacamole is also fantastic with fajitas or as a based for sandwiches too!
The Result:
Creamy and yummy. I was very careful with the amount of onion and coriander ratio into the entire mixture as I didn't want it to be too sharp to the palate. Plus, when making Guacamole ahead of the party also means that the Guacamole may turn brown or it gets watery.
I did squeeze on a layer of lime juice to cover the guacamole and I popped it into an airtight container and remove them from the fridge just before I leave for the party. It works - thankfully!

Attempt #63: Sweet cherry tomato and sausage bake
Jamie calls this the ultimate one-tray comfort food, and I cannot agree more.
It was a beautiful evening spent with dear friends and making this really fun, super easy and more importantly, super yummy!
The Result:
Pic here taken with the yummy and complimentary salad that my friend made.
I used German and Italian pork sausages and the herbs made the german dogs even more flavoursome and tangy (from the tomatoes).
