Attempt #62: JO's Porridge!

If you have school going kids and we have to prepare their breakfast and meal boxes for them, I think you will understand how challenging it is trying to think of new ways to make those bread, eggs or fruits interesting. 

So, for the next few recipes, I will be concentrating on trying out Jamie's Breakfast recipes / ideas. 

Here's one of Jamie's Porridge ideas - Oats with Banana, Almond Flakes, Cinnamon Porridge. Drizzled with Honey! Yumz! 


The result
Yummy , especially the lightly toasted almond flakes. It was an A+ from the adults but not the kids though. They are simply not a fan of oats!

Attempt #44: Kiwi fruit, ginger & banana smoothie

I have been pretty busy with my other jobs, chores…you name it and whipping up new menu for the dinner table isn’t in the priority list at the moment. But interestingly, I just felt that I want to at least attempt something simple just to spice the dinner table up. And what can be simpler than attempting new beverages/ drinks recipes by Jamie Oliver!!
 
So, the next few attempts will be just around drinks! Pretty creative ideas from Jamie that we can use for that dinner parties or even among the family.

Smoothies are usually one of the best ways to consume those unfortunately sourish, riping fruits and in this case, the hairy Kiwi fruit.
 

The result:



The banana was simply a natural sweetener that balances those sourish Kiwi fruits. I did replaced milk with Soy Milk and it still taste wonderful! Although the consistency came out to be too thick for our liking so we had to add more water or soy milk after the blending.

Jamie's rendition:


 
Ingredients
  • 3 kiwi fruit
  • 4 tablespoons organic porridge oats
  • 1 banana
  • 8 ice cubes
  • 200 ml organic milk
  • 250 g organic fat-free natural yoghurt
  • ½ cm piece fresh ginger, finely grated
  • 2-3 teaspoons honey, to taste

Method:
Top and tail the kiwi fruit and stand them on their ends. Slice the skin off in vertical strips with a sharp knife. Whiz the kiwi fruit with the remaining ingredients, apart from the honey, in a blender for 30 seconds and pour into 4 tall glasses. Sweeten with honey, if you like.

Attempt #12: Banana Pancakes

Since I have tried mostly main course recipes, I thought why not try a dessert recipe.

And banana pancake sounds so simple and the photo of Jamie’s banana pancake looks so mouthwatering. Unfortunately, this is my first time making pancakes (if you are thinking how can a 35 year old mom not made pancakes before, well, the daddy usually does it for the kids and the mommy steals a share *grin*). And this attempt reminds me that I still have a long way to go before I can be a good cook. The drama unfolds...

Here’s Jamie’s rendition of the banana pancake:

Here’s mine:

I tried to make it look as pretty as possible. The crème fraîche helps beautify the dish but here’s what it looks like when each ingredients/ items are on its own.


The pancake:

Lesson learnt: The size of your pancake is the size of your pan! Reminder to myself. Use a smaller pan! Else it looks like a 'roti canai' (a type of indian-influenced flat bread)!

 
The banana:


It doesn’t turn golden as it is supposed to be as described in Jamie’s recipe. It came out from the pan looking limpy, mushy and saggy. L
